On a recent episode of The Franchise Guide podcast, I had the pleasure of speaking with Jessi Walter Brelsford, the founder and CEO of Taste Buds Kitchen. It was a fascinating conversation, not just because her franchise concept is so unique and engaging, but because our career paths shared a similar starting point: Wall Street.

We both know what it’s like to work the long hours, wear the suit every day, and feel like a cog in a massive machine. And we both reached a point where we knew there had to be something more—something that offered more creativity, more control, and more fulfillment. Jessi’s journey from the heart of the financial world to creating a nationwide culinary entertainment franchise is a powerful testament to the fact that you can forge your own path to success. It’s a story about turning a passion into a profession and leveraging the power of franchising to build an empire.

The Corporate Escape: Seeking More Than Just a Paycheck

Many of the executives I speak with feel trapped. They’re making good money, but they’re trading their time and their well-being for it. They feel the constant stress of knowing they could be downsized at any moment, with little to show for their hard work beyond a salary. Jessi felt a similar pull, even though she was successful in her corporate career. She realized she was missing a key ingredient in her professional life.

“I was sitting at my desk one day. I was missing my 23 first cousins… I was with people who were between the ages of 20 and 50 wearing a suit every day, you know, doing fairly interesting work, but not as much creativity and kind of ingenuity as I was looking for.” – Jessi Walter Brelsford

For me, it was the two-and-a-half-hour commute each way and the desire to be present for my family. For Jessi, it was the desire for a more creative and community-oriented life. This is often the first step toward franchise freedom: acknowledging that you want and deserve more than what the corporate world can offer.

From Passion Project to Proven Concept

Most great businesses don’t start with a perfect, fully-formed business plan. They start with a simple idea and a lot of passion. Taste Buds Kitchen began as “Cupcake Kids,” a hobby Jessi started on the weekends to teach children how to bake. It was a passion project, born from a love of cooking and community.

As her classes started selling out, she realized she had stumbled upon a real business opportunity. It evolved from cupcakes to all kinds of culinary experiences, and from kids’ classes to events for all ages, from 2 to 99. Her description of the business model is brilliant in its simplicity:

This evolution is a crucial lesson for any aspiring entrepreneur. You don’t need to have it all figured out from day one. What you need is an idea you’re passionate about and the willingness to test it, refine it, and grow it. A franchise gives you the incredible advantage of stepping into a business where that initial heavy lifting has already been done for you—the concept has been proven, the brand has been built, and the systems are in place.

Building an Empire: Why Franchising?

A question I often get is, “If a business is so successful, why would the founder franchise it instead of just opening more corporate locations?” Jessi’s answer gets to the heart of what makes the franchise model so powerful.

When she was ready to expand, she had a list of over 100 people who had reached out asking if she could teach them how to open their own Taste Buds Kitchen. She realized that the best way to grow wasn’t to manage every location herself, but to partner with like-minded, passionate individuals across the country. Franchising allowed her to scale the business in a way that corporate expansion never could, empowering local owners to bring the Taste Buds Kitchen experience to their own communities. It’s a model built on mutual success; as I always say, when the franchisee makes money, the franchisor makes money. This creates a true partnership focused on growth.

The Recipe for a Perfect Franchisee: It’s Not What You Think

When people think about opening a food-related franchise, they often assume they need to be a chef or have a culinary background. Jessi was quick to bust that myth. The ideal franchisee for Taste Buds Kitchen isn’t defined by their cooking skills, but by their business skills and their passion for the community.

“We want our engaged owners, um, who wanna manage the business and who wanna manage the team. We want good business acumen, you know, a strong focus on the customer experience and someone who wants to get out and about and be part of their community.” – Jessi Walter Brelsford

This is true for so many franchise systems. Her number one piece of advice is something I preach to every candidate I work with.

“I think my advice I give to all of our franchisees is to be gritty. Be scrappy… It’s not gonna be easy, right? Do not expect franchising or anything to write a check and pay for it and have things fall into line. That is just not life.” – Jessi Walter Brelsford

That grit is what gets you through the challenges, a concept famously explored in Angela Duckworth’s research on the topic. But grit alone isn’t enough. True fulfillment comes when you find the intersection of your passion and a profitable business model. It reminds me of how Marcus Lemonis on his shows, The Profit and The Fixer, breaks down business success into People, Process, and Product. Similarly, Jessi’s annual franchisee summit is themed around “Passion, Process, and Profit,” and it perfectly encapsulates the goal. You can have a business that you love, that runs on a proven process, and that allows you to achieve the life you’ve always wanted.
